Healthy and Delicious - this mango quinoa salad is the ultimate Sunday dish

Cranberry Mango Quinoa Salad
Both tart and sweet, this simple fruity quinoa salad will liven up any meal!

Ingredients

1 Cup quinoa
1 Cup grapefruit juice
1 Cup water
1 mango, diced
1/2 Cups dried cranberries
1/2 red onion, finely chopped
1/4 Cups parsley, finely chopped
1/3 Cups mint, finely chopped
1/2 Cups sliced almonds
1 lime, juice and zest
12 tablespoons olive oil
salt and pepper to taste

Directions
Combine quinoa, juice, and water in a medium saucepan. Bring to a boil, reduce heat and simmer 15 min, or until liquid is absorbed. Remove from heat, fluff with fork, and let cool.
Combine quinoa with rest of the ingredients. Served cold or at room temperature.
