Very few people like eating onion in its raw form. It's mostly because it has a very strong taste that almost stings your tongue and it has a very strong smell as well. Some people can’t even stand the fumes that are released when an onion is cut as it makes them cry profusely.
And it is because of these attributes, we consider onions to be a part of the spicy things we eat. But in certain parts of India, the white variant of onions are used to make sweets.
If you take out the components that give onions its spice, it turns sweet. which is why the fried onions that are used to garnish biryani have a distinct taste.
In order to make Onion Halwa, onions are finely diced and fried in Ghee or butter on a low flame till they become a mash. Milk, sugar and dry fruits like cashew, raisins, and almonds are added to the mix to make it richer. Once the milk has been reduced, you get a Halwa that is unlike any other halwa you have eaten.
The funny thing about this halwa is that it constantly plays games with your mind. Since you know its made out of onions, your mind is unable to comprehend the sweet taste of the Halwa. And just like Halwa, Onion can also be used to make other milk-based sweets like Kheer.
Onions are really versatile as they are a part of almost every cuisine served in India but who knew that they could also be used to make desserts?
