Cashew nuts are an essential part of vegan and vegetarian diets. Despite being so tiny, these nuts pack a lot of nutrients and are very healthy. We all love cashews in our meal. Be it Gajar Ka Halwa or an Aromatic Pulao. But what most of us don’t know about is how dark the Cashew Industry can get.
In India, thousands of women have been employed either by companies or plantations to harvest cashew nuts. Harvesting cashews is still easy when it is compared to shelling the nuts. Most of this work is done by hand and that is where the problem lies.
The cashew fruit is surely a pretty sight. The bright yellow to orange fruit has a small brown nut dangling from it. The actual nut is cased inside brittle layers of shells. But inside these shells, you can also find Cardol and anacardic acids that keep the nut moist.
